Pistachio Coconut Matcha Shake

I find that a Pistachio Coconut Matcha Shake satisfies my dessert craving as well as any midday sweet tooth urges. It’s ready in minutes and contains several healthy nutrients. Most importantly, this amazing shake can be made low-carb, gluten-free, and dairy-free. As a result, no one needs to miss out on the delightful goodness.

Matcha Powder

Okay. So, first of all, I think it’s rather obvious that a key ingredient in a Pistachio Coconut Matcha Shake is culinary matcha powder.

You probably already know that Matcha has some pretty amazing health benefits. For that reason, it is often found in lattes, smoothies, and baked goods. 

Did you also know that culinary Matcha is different from regular green tea? Yep! Matcha is made from the entire green tea leaves. The stems and veins are removed from the tea leaves, which are then ground into a fine powder. This process helps preserve the rich nutrients and antioxidants found in the leaves. 

Pistachios

Secondly, I love pistachios and enjoy eating them straight from the shell. Because pistachios are a good source of plant-based protein a small handful is filling and satisfying.

Pistachios also are also high in fiber, rich in nutrients and minerals, and are wonderful for overall health. Pistachio flavor pairs perfectly with coconut and matcha. 

Ice Cream

Pistachio ice cream (or gelato) is yet another key ingredient in this shake. 

Gluten-Free Option: to make this recipe gluten-free use a brand such as Haagen-Dazs gluten-free pistachio ice cream (which is shown in the picture above).  

Low-Carb Option: if you need a low-carb option use a brand of ice cream such as Halo Top.

Dairy-Free Option

Need a dairy-free option? Use almond, cashew, oat, or other dairy-free alternative kinds of milk.

A couple of dairy-free ice cream brands are NadaMoo or SoDelicious Coconut Ice Cream. (TIP: you can always use a vanilla dairy-free ice cream and add your own chopped pistachios.)

NOTE: Feel free to modify the amounts of the ingredients to suit your individual tastes. To make the shake thicker add more ice cream. If the matcha flavor is too strong simply use half the amount. 

Pretty Green! 

I think a Pistachio Coconut Matcha Shake is great any day of the week, however, the lovely green color lends itself beautifully for a St. Patrick’s Day treat.  

Pistachio Coconut Matcha Shake
Yield: 1 Serving

Pistachio Coconut Matcha Shake

Prep Time: 10 minutes
Total Time: 10 minutes

If you love frozen treats, you'll love this delicious and creamy green shake that's on the healthy side.

Ingredients

  • 1 cup pistachio ice cream or gelato (*Low-Carb option: use a brand such as Halo Top brand. *Gluten-Free option - use a gluten-free brand such as Haagen Dazs. *Dairy-Free Option: use a brand such as NadaMoo)
  • 1/2 cup coconut milk
  • 2 teaspoons honey
  • 2 teaspoons culinary matcha powder
  • 1/2 teaspoon ground cardamom
  • 2 Tablespoons thawed coconut whipped topping
  • 1 tablespoon chopped pistachios for garnish

Instructions

Place ice cream, coconut milk, honey, matcha powder and cardamom in a blender. Cover and blend on high until smooth. Top with whipped coconut topping and chopped pistachios. Serve immediately.
