How to Make An Apple Cider Spice Cake
Savor the essence of Autumn in every bite of this delightful cake, complemented beautifully by a warm cup of apple cider or hot chocolate.
Ingredients
- CAKE:
- 1-1/2 cups butter, softened
- 2-1/4 cups sugar
- 6 large eggs
- 1/2 teaspoon salt
- 1 Tablespoon ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 cup apple cider
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour (GF Option: use a gluten-free flour blend + 3 teaspoons xanthan gum, unless flour already contains it)
- 1 teaspoon baking powder
- SAUCE:
- 1/4 cup butter
- 1/2 cup sugar
- 1/4 cup buttermilk
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
Instructions
- Cream together softened butter and sugar. Add eggs; beat until eggs are well incorporated. Add salt, cinnamon, allspice, nutmeg, cloves, apple cider, and vanilla; mix well.
- Add flour, one cup at a time, beating after each addition. (Scrape sides down making sure the spices and flour are mixed well.) Add baking powder; mix just until incorporated (do not over beat).
- Pour batter into a well greased 10-inch fluted tube pan. Bake at 350 degrees F. for 60-65 minutes, or until cake tester inserted into the center comes out clean.
- Cool for 10 minutes then flip cake pan over onto a serving platter.
- While the cake is cooling make the sauce by combining butter, sugar, buttermilk, and baking soda in a saucepan. Bring to a boil; reduce heat and simmer 10 minutes. Stir in vanilla.
- While the cake is still warm, drizzle 1/3 of the sauce over the cake. Serve the remaining sauce over individual cake servings, if desired. (NOTE: The sauce thickens as it cools)
Notes
You can also use a greased 10-inch angel food cake pan instead of a Bundt pan.
If you are pressed for time you can use store-bought caramel sauce instead of making your own sauce.
