To make these Lemon Drop Cookies you’ll first need to preheat your oven to 375 degrees F. Next, line your cookie sheets with parchment paper and set them aside. Now you are ready to made the cookie dough.
Use a small cookie scoop to drop the cookie dough (2-inches apart) onto the prepared cookie sheets. Finally, bake the cookies for 8 to 10 minutes or until the edges are slightly brown. Cool the cookies for 2 minutes then transfer them to a wire cooling rack and allow them to cool completely before icing.
Simple Lemon Drop Cookies
These easy-to-make lemon cookies have the perfect balance of sweetness and tanginess.
Ingredients
- 3/4 cup butter, softened
- 1-3/4 cups granulated sugar
- 4 teaspoons lemon zest, plus additional for garnish
- 3 large eggs
- 3/4 teaspoon salt
- 1/4 cup plus 3 Tablespoons fresh lemon juice, divided
- 3 cups all-purpose flour (GF Option: use a gluten-free flour blend + 3 teaspoons xanthan gum, unless flour blend already contains it)
- 2 teaspoons baking powder (I use an aluminum-free brand)
- 2 cups powdered sugar
Instructions
- Preheat oven to 375 degrees F. Line cookie sheets with parchment paper; set aside
- Place butter in large mixing bowl and beat until creamy and smooth (about 30 seconds). Add sugar, lemon zest, eggs, and salt; beat on medium speed for 1.5 minutes; occasionally scrape sides of bowl. Add lemon juice to mixture and beat for another 30 seconds.
- Add flour; one cup at a time. Add baking powder; beat just until combined.
- Using a small cookie scoop or spoon, drop cookie dough 2-inches apart onto the prepared cookie sheets. Bake for 8 to 10 minutes or until edges are lightly brown. Cool for 2 minutes then transfer cookies to wire cooling rack; cool.
- For the icing ~ whisk together powdered sugar and 3 Tablespoons lemon juice. Spread icing evenly over tops of cooled cookies. Garnish with remaining lemon zest.
