I’ve noticed that more and more people are growing their own gardens these days. That’s a good thing because fresh, homegrown produce usually tastes better than store-bought produce.
Another thing I’ve noticed is that one zucchini plant usually produces an excessive amount of zucchinis. That is also a really good thing. Why? Because there are so many delicious things you can do with zucchini. Besides making Simple Pan-Fried Zucchini you can make amazing Cream Cheese Zucchini Bread, Chocolate Zucchini Brownies, and Chocolate Espresso Zucchini Sheet Cake.
Shredded Zucchini
This recipe for Zucchini Fritters begins by placing 2 heaping cups of shredded zucchini into a large mixing bowl.
Seasonings
The next step is to combine 1/2 cup milk and 1 egg in a mixing bowl and set it aside.
Next, combine the dry ingredients in a separate mixing bowl. The dry ingredients consist of 1-1/2 cups all-purpose flour, 1-1/2 teaspoon baking powder, and half of a 1-ounce package of Ranch salad dressing and seasoning mix.
Combine Ingredients
Add the wet ingredients to the dry ingredients and blend well. Fold in the zucchini.
Fry the Fritters
Fill a deep fat fryer or skillet with oil to a 2-inch depth. Heat to 375 degrees F. Next, drop the batter by rounded teaspoonsful into the hot oil. Fry until golden brown, turning once. Drain thoroughly on paper towels. (At first, I suggest test-frying one or two fritters. That way you can easily adjust the size and/or frying time until you have it just right.)
Place the hot fritters into a small wicker serving basket lined with a piece of foil or a cute kitchen towel, or both! Oh, and you’ll definitely want to serve Ranch dressing on the side as a dipping sauce.
This recipe yields 1-1/2 to 2 dozen zucchini fritters (depending on how big you make them).

How to Make Easy Zucchini Fritters
These Zucchini Fritters are a delicious way to sneak zucchini into your diet. Serve them with your favorite BBQ or seafood and fresh corn on the cob.
Ingredients
- Vegetable Oil for frying
- 1/2 cup milk
- 1 egg, lightly beaten
- 1-1/2cups all-purpose flour (GF Option: use gluten-free flour blend)
- 1 1/2 teaspoons baking powder (GF Option: use gluten-free baking powder)
- 1/2 of a 1-ounce package ranch-style dip mix
- 2 heaping cups (8 ounces) shredded zucchini
- Optional: Ranch dressing for dipping sauce
Instructions
- Fill a deep-fat fryer or skillet with oil to a 2-inch depth. Heat to 375 degrees F.
- Combine milk and egg in a mixing bowl.
- Stir together flour, baking powder, and ranch mix. Add to egg mixture; blend well.
- Fold in zucchini. Drop batter by rounded teaspoonsful into the hot oil. Fry until golden brown, turning once. Drain thoroughly on paper towels. Serve hot.
- Optional: serve with Ranch dressing on the side as a dipping sauce.
