This Gluten-Free Caramel Apple Pecan Monkey Bread is slightly sweet, messy, and fun to eat. Kids particularly enjoy eating monkey bread because they can use their fingers; no utensils are required. In addition, it’s also a recipe that older children can help make.
4 Easy Steps
First, combine melted butter and pure maple syrup and pour it into the bottom of a lightly greased Bundt pan (I use a 10-inch size Bundt pan).
Secondly, mix chopped apples with brown sugar, cinnamon, and chopped pecans. Spoon half of the mixture into the bottom of the Bundt pan and drizzle gluten-free caramel sauce over the apples.
Thirdly, make the dough by combining gluten-free baking mix (use King Arthur all-purpose gluten-free baking mix), sugar, melted butter, vanilla, eggs, and milk. Form dough balls and randomly place half of them over the apples in the Bundt pan. Repeat the process with the remaining apples, caramel sauce, and dough balls.
Bake for 40 to 45 minutes or until cake tester comes out clean. Allow the monkey bread to cool in the pan for 30 minutes.
Carefully turn the pan over onto a heat-proof serving plate or cutting board and remove the pan. Cool for an additional 30 minutes.
Icing
The fourth and final step is to make the icing which consists of a mixture of butter, vanilla, powdered sugar, and milk. Drizzle the icing over the top of the Gluten-Free Caramel Apple Pecan Monkey Bread and top with an additional sprinkle of chopped pecans.
How to Make Gluten-Free Caramel Apple Pecan Monkey Bread
A delicious monkey bread that is loaded with amazing warm fall flavors such as cinnamon, maple, brown sugar, apples, and pecans.
Ingredients
- 3 Tablespoons butter, melted
- 3 Tablespoons pure maple syrup
- CINNAMON APPLES:
- 3-1/2 cups apples, peeled and chopped into small pieces
- 1/4 cup dark brown sugar
- 1 Tablespoon ground cinnamon
- 1/2 cup pecans, chopped
- BISCUIT DOUGH:
- 4-1/2 cups gluten-free baking mix (I use King Arthur gluten-free all-purpose baking mix)
- 4 Tablespoons granulated sugar
- 5 Tablespoons butter, melted
- 2 teaspoons vanilla
- 2 eggs
- 1-1/2 cups milk
- CARAMEL:
- 1/2 cup gluten-free caramel sauce, divided
- ICING:
- 1/2 teaspoon butter, softened
- 1/2 teaspoon vanilla
- 1 cup confectioners' sugar
- 3 teaspoons milk, or enough to make icing thin enough to drizzle
- GARNISH:
- 1/2 cup pecans, chopped
Instructions
- Preheat oven to 350 degrees F.
- Spray a 10-inch fluted Bundt cake pan with vegetable spray. In a small bowl, combine melted butter and maple syrup. Drizzle mixture into bottom of Bundt pan.
- Combine apples, brown sugar, cinnamon, and pecans. Spoon 1/2 of the apple mixture into bottom of Bundt pan. Drizzle half of the caramel sauce over the apples.
- In a large mixing bowl, combine baking mix, sugar, melted butter, vanilla, eggs, and milk; mix well. Form small balls with dough; randomly place half of them in the Bundt pan. Place remaining half of the apple mixture over the dough balls, drizzle remaining caramel sauce over apples, and place the remaining dough balls on top.
- Bake for 40 - 45 minutes or until toothpick comes out clean. Cool in pan for 30 minutes. Carefully turn Bundt pan over onto a heat-proof serving plate or cutting board. Remove pan. Cool bread for an additional 30 minutes before icing.
- Drizzle icing over top; sprinkle with pecans. Serve warm.
- Store leftovers in an airtight container.
