Not only is this a bright, colorful, and sweet treat, but it’s also a great way to use any extra rhubarb you may have on hand.

Gluten-Free Option
This recipe for Rhubarb Dessert Pizza is uncomplicated and extremely easy to make gluten-free. Simply swap gluten-free flour blend for regular all-purpose flour. As of the writing of this post, all other ingredients are naturally gluten-free. NOTE: All of the photos in this post are of the gluten-free version.
Assembly
- Step 1 – Beat together sugar, butter, canola oil, and an egg. Next, add flour and baking powder and press the batter into a buttered 12-inch solid pizza pan.
- Step 2 – Place diced fresh rhubarb on top of crust.
- Step 3 – Sprinkle with either strawberry gelatin or cherry gelatin.
- Step 4 – Combine sugar, flour, and butter and crumble it on top of pizza.
Bake your Rhubarb Dessert Pizza in a preheated 350 degrees F. oven for 45 minutes.

How to Make Rhubarb Dessert Pizza (GF Option)
Nearly every spring I have extra rhubarb on hand and this colorful and satisfying dessert recipe is yet another great way to use it.
Ingredients
- CRUST:
- 1/2 cup sugar
- 1/4 cup butter, softened
- 2 Tablespoons canola oil
- 1 egg
- 1-1/4 cup flour (GF Option - use a gluten-free flour blend + 1 teaspoon xanthan gum ~ unless flour already contains it)
- 1 teaspoon baking powder
- RHUBARB TOPPING:
- 3 cups finely diced rhubarb
- 1 (3-ounce) package strawberry or cherry gelatin
- CRUMBLE TOPPING:
- 1/2 cup sugar
- 1/2 cup flour
- 1/4 cup butter, softened
Instructions
- Beat together first 4 ingredients. Add flour and baking powder. Press into a well buttered 12-inch pizza pan.
- Place rhubarb on crust. Sprinkle with gelatin.
- Combine remaining ingredients and crumble on top.
- Bake in preheated oven at 350 degrees F. for 45 minutes.
- Cool. Cut and serve. Garnish with scoop of vanilla ice cream.
