Homemade Mayonnaise Ingredients
This recipe does contain raw eggs. For this reason, I only suggest farm-fresh eggs from a trusted source. You can easily half this recipe for a smaller amount.
- 2 farm fresh eggs
- 2 cups olive oil (extra-virgin not recommended) (I have successfully made this with avocado oil)
- 1/4 tsp ground mustard
- 1/4 cup fresh squeezed lemon juice
Equipment needed
- Wide-mouth mason jar with an airtight lid
- Immersion blender (if you don’t have an immersion blender, a regular blender might work)
Directions
- Place all the ingredients in a large mouth mason jar.
- Use the immersion blender to mix the ingredients until smooth mayo forms, and all the oil is fully blended. Continue mixing for 1–2 minutes.
- Add the lid to the jar (be sure to write the date on the jar) and store it in the refrigerator for 2 to 3 weeks.
