Easy Gluten-Free Variation
This elegant cheesecake is a wonderful make-ahead dessert. With one simple substitution, (use gluten-free vanilla wafers) it easily becomes gluten-free. As a matter of fact, all of the photos in this post are of the gluten-free version.
Mandarin Oranges ~ Fresh or Canned?
I love the fact that you can use either fresh or canned Mandarin oranges to garnish this cheesecake. I’ve found that it takes about six to seven fresh Mandarin oranges or 2 cans (11-ounces, each) of canned. If you use canned then be sure to drain the oranges well before arranging them on top of the cheesecake.
The crust consist of a mixture of crushed vanilla wafers, butter, and sugar. The filling consists of cream cheese, sugar, sour cream, eggs, and melted white baking chocolate. **White chocolate is usually gluten-free but always be sure to check the ingredients on the label if you are making the gluten-free version of cheesecake.
The topping consists of a mixture of sour cream, sugar, and orange extract. **Again, orange extract should be gluten-free but always check the ingredients on the label if you are making a gluten-free version.
