One Pot — Easy Bow Tie Pasta Soup (Gluten Free Option Included)

I am super excited to participate in this month’s recipe challenge with several other amazing bloggers. The theme for our recipe creations this month is Easy Pasta Recipes. A list of all of the other amazing easy pasta recipe contributions can be found at the end of this post.

When my husband and I were first married we weren’t very good cooks. Over the years, thankfully, we have gotten a whole lot better at making amazing (and mostly healthy) meals! Check out these Smoked Honey BBQ Baby Back Ribs and Rib Eyes with Garlic Mayonnaise. Yeah, we were NOT eating like that as newly-weds!
We lived off of Tuna Noodle Casserole and Spaghetti (meatless too, because it was cheaper).
Well, this One Pot Easy Bow Tie Pasta Soup came from my mother in law. It was a recipe that we made often in the early years of our marriage because it is so fast and easy to make! Plus it makes great leftovers!
Of course, we still eat this bow tie soup often because it is great for a fast meal when you are short on time and it is delicious!

In the video, I did cook the sausage, pepper, onion, and garlic in a skillet and then transferred it to my soup pot. As soon as I did that, I thought to myself how silly am I! I just caused myself more dishes!

This can totally be cooked in one pot, even though I forgot to show that in the video. Learn from my mistakes!

Bow Tie Pasta Soup

Ingredients:

  • 1 lb ground sausage
  • 1 medium bell pepper, diced
  • 1 onion, diced
  • 1 garlic clove, minced
  • 28 ounces chopped tomatoes, with liquid
  • 6 cups chicken broth
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 cups uncooked bow tie pasta (use favorite gluten free pasta for GF version)

Directions:

  1. In a dutch oven or stock pot, cook ground sausage. Remove from pan and drain grease.
  2. In the same pot, add diced onion and pepper and minced garlic. Cook until onions are translucent and peppers are tender.
  3. Add sausage back to pot along with the remaining ingredients.
  4. Bring to a boil and cook until pasta is tender about 10 minutes.

Note: If there are any leftovers, the pasta will continue to absorb the liquid and the next day the soup will be less “soupy.” Add more chicken broth if you desire it to be more “soupy.”
