Frosty Key Lime Treats

Frosty Key Lime Treats are a wonderful mini dessert for someone who is on a low carb diet. They are also diabetic-friendly and can be made to be gluten-free. 

1[1]My husband and I are trying to lose weight and so I am on a mission to find recipes that are not only gluten-free, but low carb as well. I have made this lime dessert recipe several times now and we have decided that it is a keeper. It’s amazingly simple to make and requires only 3 ingredients. Let me show you how it’s done.

Start by combining the yogurt and the dry jello together in a mixing bowl. I used a wire whisk to mix it so that it was well blended. Next, add the Cool Whip and fold or whisk it into the mixture.

You can now pour the mixture into a 9-inch square dish, freeze it and then cut it into squares whenever you are ready to serve the dessert. To make this dessert a little more festive, I chose to take a small cookie scoop and place it into individual mini cupcake liners.

One recipe makes 18 mini bite-size treats.

20150217_194638_8_bestshotBefore freezing my treats I added just a touch of shaved chocolate curls and a few sprinkles of shamrock candies for St. Patrick’s Day. You can play around with various toppings such as fresh fruit, other candy sprinkles, chopped nuts, etc… Just remember that any toppings you add will increase the calories and carbs. These treats are wonderful plain or you can always add one small dollop of the reduced fat whipped topping.

Ingredients

  • 1 package (.35 ounce) sugar-free lime gelatin mix (GF Option - use sugar-free & gluten-free gelatin mix)
  • 1 container (8 ounce) reduced-fat whipped topping, thawed
  • 2 containers (6 ounce) reduced-fat key lime pie yogurt (GF Option - use gluten-free yogurt)

Instructions

  1. Combine yogurt and gelatin in bowl and mix well.
  2. Fold in whipped topping and pour into 9-inch square dish.
  3. Freeze until ready to serve.
  4. Cut into squares.

Notes

Freezing time may vary depending on your appliance.

The green key lime flavors make these treats perfect to serve at a St. Patrick’s Day party. I think that any guest who is diabetic will truly enjoy having a fun diabetic-friendly dessert.

    I tried this with a little change. I used plain Greek yogurt with 1 packet of truvia, and dissolved the jello in 1/4 hot water before mixing it all together. They turned out really delicious. I ate half of them before they were frozen. Thank you for sharing the recipe!
