This year I am on a mission to lose weight and am looking to find recipes that are not only gluten-free but low carb. I have made this lime dessert recipe several times now have decided it’s a keeper.
This cute little dessert is amazingly simple to make and requires only 3 ingredients. Let me show you how it’s done.
Start by combining the yogurt and the dry jello together in a mixing bowl. I used a wire whisk to mix it so that it was well blended. Next, add the Cool Whip and fold or whisk it into the mixture.
You can now pour the mixture into a 9-inch square baking dish, freeze it and then cut it into squares whenever you are ready to serve the dessert. To make this dessert a little more festive, I chose to take a small cookie scoop and place it into individual mini cupcake liners.
One recipe makes 18 mini bite-size treats.
Before freezing my treats I added just a touch of shaved chocolate curls and a few sprinkles of candy shamrock sprinkles for St. Patrick’s Day.
You can play around with various toppings such as fresh fruit, other candy sprinkles, chopped nuts, etc… Just remember that any toppings you add will increase the calories and carbs. These treats are wonderful plain or you can always add one small dollop of the reduced-fat whipped topping.

Ingredients
- 1 package (.35 ounce) sugar-free lime gelatin mix (GF Option - use sugar-free & gluten-free gelatin mix)
- 1 container (8 ounce) reduced-fat whipped topping, thawed
- 2 containers (6 ounce) reduced-fat key lime pie yogurt (GF Option - use gluten-free yogurt)
Instructions
- Combine yogurt and gelatin in bowl and mix well.
- Fold in whipped topping and pour into 9-inch square dish.
- Freeze until ready to serve.
- Cut into squares.
Notes
Freezing time may vary depending on your appliance.
