Fresh, juicy, sweet blueberries are one of my favorite foods. Along with blueberry fritters, I like putting blueberries in muffins, cakes and pies, on top of cheesecake, pancakes, and chia pudding and stirred into my yogurt.
The photo above is a picture of the batter for blueberry fritters. (Again, the photos within this post are both gluten-free and dairy-free.) The batter consists of flour, baking powder, sugar, salt, an egg, milk, and blueberries.
While preparing the batter go ahead and heat 3 to 4 inches of oil to 375 degrees F. It’s best to use a Dutch oven or fryer, but you certainly don’t have to. When the oil is hot enough, use a 1.5-inch cookie scoop and drop the batter into the oil. Cook until golden brown on one side (approximately 2 minutes), then flip the fritters and cook for another 2 minutes or until that side is also golden brown.
Next, line a metal or glass bowl with paper towels. When the fritters have fully cooked, use a frying strainer to carefully remove them from the hot oil. Cool for about 4 to 5 minutes.
Before serving sprinkle the fritters with a light dusting of powdered sugar. (NOTE: I like to use corn-free powdered sugar.)
I really like this recipe for blueberry fritters because it isn’t sickening sweet and it makes around 16 fritters. It’s also easy to control how much powdered sugar you use, which means you can increase or decrease any added sweetness.
