Therefore, when I saw Mint Mojito Fruit Salad in a local grocery store magazine I simply couldn’t wait to try it. Now, after making it, I certainly do give this salad 5 gold stars! And in addition to that, I’m adding it to my list of favorite salads! Yes, Ma’am! It’s a keeper!
To make Mint Mojito Fruit Salad you’ll need:
- strawberries
- blackberries
- blueberries
- raspberries
- mandarin oranges
- kiwi
- fresh mint (garnish)
Layer the fruit on a pretty white platter or in a white serving bowl. (NOTE: The colors show up best when served on white dishware.) Set aside.
To make the dressing you’ll need:
- honey
- fresh lime juice
- spiced rum (Note: be sure to use a gluten-free rum if you need this salad to be gluten-free)
Whisk all three ingredients together and drizzle over the fruit. Gently toss. Garnish with chopped mint and mint leaves.
Serve immediately or cover and refrigerate for up to 4 hours.

- SALAD
- 1 cup (EACH) fresh strawberries, (sliced), blackberries, blueberries, and raspberries
- 5 - 6 mandarin oranges, sliced and halved
- 1 fresh kiwi, sliced
- 2 Tablespoons fresh chopped mint, plus additional mint leaves for garnish
- DRESSING
- 3 Tablespoons honey
- 3 Tablespoons fresh lime juice
- 1 Tablespoon spiced rum (Omit or use a gluten-free brand if you need this salad to be gluten-free)
