The Gift of Granola!
Recently I hosted a sleepover for my granddaughters. The next day when I took the girls home, I stopped in to visit with my daughter-in-law, Becky. After a few minutes into our visit, she went into her kitchen to check on a pan of homemade granola she was baking. It looked and smelled amazing.
Becky told me that she had received a granola recipe from a former fellow co-worker and shared the recipe with me. Becky also sent me home with a jar of freshly baked homemade granola for my dad. She is so thoughtful and generous and frequently shares her delicious baked treats with us.

Mixing Granola Ingredients
Okay, so back to making granola…
I really wanted to try her co-worker’s recipe but because I’ve been on a gluten-free diet for 30 years I needed to make a gluten-free version. The recipe in this post includes a gluten-free option and is similar to the original recipe. However, I did modify the recipe by adding raw almonds, pecans, and extra walnuts. I also added raw pumpkin seeds, left out Grape-nuts Cereal, and used softened coconut manna (or butter) in place of shredded coconut. (NOTE: All of the photos in this post are of the gluten-free version of Nutty High Fiber Granola.)
The first step when making this granola is to combine all of the dry ingredients. Next add molasses, vanilla, oil, and (optional) egg whites. Mix all of the ingredients together until well combined.
Baking Granola
Next, divide and pour the mixture into two extra large, deep-sided baking pans (such as 16.2 x 12.6 x 2.4 inches). Bake in a preheated 200 – 225 degrees F oven for 2 hours, or until golden brown. Stir every 20 to 30 minutes.
Cooling Granola
When the granola is ready, remove the granola from the oven and allow it to cool completely. Store in an air-tight container. (I personally think that storing homemade granola in an air-tight glass storage jar is much better than using plastic-type storage containers. It seems to keep fresher longer when stored in glass containers.)
Ready to Serve
As you know, granola isn’t just for breakfast. I also like adding to yogurt or using it as an ice cream topping. Additionally, by adding ingredients such as dark chocolate chips, and fresh or dehydrated fruit, this granola quickly becomes a delightful trail mix.

How to Make Nutty High Fiber Granola (GF Option)
A nutritious and high-fiber breakfast is always a great way to start any morning, and this nutty granola fits the bill!
Ingredients
- 7 cups rolled oats (GF Option: use a gluten-free brand. I use Bob's Red Mill extra thick gluten-free rolled oats.)
- 1 cup chopped raw almonds
- 1 cup chopped raw walnuts
- 1 cup chopped raw pecans
- 1 cup raw pumpkin seeds
- 1/2 cup Grape-nuts cereal (GF Option: omit cereal)
- 1/2 cup coconut manna/butter, softened or 2 cups shredded coconut
- 1 cup wheat germ or ground flax (GF Option: omit wheat germ and only use ground flax)
- 1 teaspoon salt
- 1/2 cup brown sugar or 1/3 cup honey
- 2 Tablespoons molasses
- 1 teaspoon vanilla extract
- 1 cup canola or vegetable oil
- 2 egg whites - (Optional: the egg whites make granola crispier)
Instructions
- Combine dry ingredients. Add molasses, vanilla, oil, and (optional) egg whites. Mix all of the ingredients together until well combined.
- Divide and pour the mixture into two extra large, deep-sided, baking pans (such as 16.2 x 12.6 x 2.4 inches). Bake in a preheated 200 - 225 degrees F oven for 2 hours, or until golden brown. Stir every 20 - 30 minutes.
- Remove from oven; cool completely. Store in an air-tight container.
Notes
Keeps well for up to 4 weeks when stored in an air-tight glass container.
Feel free to make trail mix by adding additional ingredients such as dark chocolate chips, and dehydrated fruits.
