Cheeseburger Soup is perfect for a cold winter’s day! Or as my family lives, all year long.
We like to eat soup even in the middle of summer because soup is fast and easy and you don’t have to make any other sides! Or maybe just a salad, but only if you want.
I normally make this Cheeseburger soup with ground beef. However, there was quite a snowstorm the night before I made this, and I was not about to go in that mess to go to the grocery store. This time I made it a little bit differently just because I had to use what was already (or not already) in my fridge.
I had no ground beef, so I used ground sausage instead. I was a little concerned about this switch, but my husband actually liked it better with the sausage! This proves you can use whatever type of ground meat you prefer and it will still work. Hooray for versatile soups!
When it comes to vegetables, the recipe calls for potatoes, onions, carrots, and celery. I didn’t have any celery, so I just omitted it this time. You could also throw in a diced bell pepper or sliced mushrooms.
My kids did get a little offended over the vegetables being in the cheeseburger soup. Their argument was that a real cheeseburger doesn’t have carrots or potatoes on it! HAHA! Cheeseburger soup gets its name because it has cheese and burgers in it, not because it is supposed to replace a cheeseburger!
Cheeseburger Soup Ingredients:
- 1 pound ground meat (beef or sausage) browned, and grease drained
- 3 celery stalks finely diced
- 1 onion, diced
- 3/4 cup carrots, chopped
- 1 teaspoon basil
- 1 teaspoon parsley
- 4 tablespoons butter
- 3 cups chicken broth
- 4 cups cubed potatoes (peel or don’t peel, it’s your preference)
- 2 cups shredded cheddar cheese
- 1 – 1/2 cups milk
- 1/4 cup sour cream
Cheeseburger Soup Directions:
- Melt butter in a stock pan.
- Over medium heat, add carrots, celery, and onion and sauté until onions start to become tender.
- Add chicken broth, browned meat, and spices.
- Bring chicken broth to a boil and add diced potatoes. Boil until potatoes, carrots, and celery are tender.
- Turn heat to low and add milk, cheddar cheese, and sour cream. Stir until cheese is melted. Remove from heat and serve.
