No-Bake Pineapple Cream Cheese Pie (Gluten-Free Option) 

Recently I made a No-Bake Pineapple Cream Cheese Pie ( with a gluten-free option) and my dad instantly fell in love with it. Shortly after that, I made this No-Bake Toffee Bits Cream Cheese Pie and he loved equally as much. Because this recipe also has my dad’s approval I figure it’s worthy of a blog post too. 

Ingredients:

  • 3-ounces softened cream cheese 
  • 2 tablespoons granulated sugar
  • 1/2 cup half-and-half cream
  • 1 1/2 cups heavy whipping cream, whipped OR (8-ounce) carton whipped topping, thawed (GF Option: I prefer to use heavy whipping cream but you can also use a gluten-free carton of store-bought whipped topping)
  • 8-ounce package of Toffee Bits or Milk Chocolate English Toffee Bits, divided (as of the writing of this post, Hershey’s Heath Milk Chocolate English Toffee Bits are  gluten-free. However, always read the label because the manufacturing process can change at any time.)
  • 9-inch store-bought graham cracker pie crust (GF Option: use a gluten-free graham cracker pie crust) OR you can make your own homemade graham cracker crust. 

NOTE: To make a homemade graham cracker crust combine 1-1/2 cups finely crushed graham cracker crumbs (GF Option: use gluten-free graham cracker crumbs) + 3 tablespoons granulated sugar + 1/3 cup butter, melted. Combine graham cracker crumbs, sugar, and butter; press onto the bottom and up the sides of an ungreased 9-inch pie pan. Refrigerate for 1 hour.

Let’s Make a Pie! 

First, using a large mixing bowl, beat together the cream cheese and sugar until it reaches a smooth consistency (as seen in the picture above)

Toffee Bits

Second, beat in the cream until it is well blended then fold in the whipped topping and 1 cup of toffee bits.

Almost Finished! 

Third, spoon the filling into the graham cracker crust and smooth the top using the back of a large spoon or spatula. 

More Toffee Bits! 

Finally, top it all off with a sprinkle of Toffee Bits. 

Freeze

Cover and freeze the pie for 8 hours or overnight.

Serve

To serve, remove the pie from the freezer and thaw for 10 – 15 minutes before cutting.

Depending on how big you cut each slice, this pie will provide 6 to 8 servings.

Instructions

In a large mixing bowl, beat cream cheese and sugar until smooth. Beat in cream until blended. Fold in whipped topping and 1 cup toffee bits. Spoon into crust; sprinkle top with remaining toffee bits. Cover and freeze for 8 hours or overnight. Remove from the freezer 10 - 15 minutes before serving.
