Fresh raspberries make me happy! So do Raspberry Streusel Muffins! These tasty muffins are a delightful way to add a little something extra special to any meal.
I fondly remember picking fresh raspberries on our farm as a kid. I also remember that it was hard not eating all of them straight off the bush before reaching the house! Guess that’s not all bad though because raspberries are little powerhouses, loaded with vitamins, fiber, and other healthy nutrients.

What’s So Great About Raspberries?
As previously mentioned, raspberries are remarkably healthy. If you do a little research of your own, you’ll find that in general, berries contain some of the highest amounts of fiber. Raspberries are among the highest. Just one cup provides one-third of the daily fiber you need along with 40 percent of the recommended daily Vitamin C and manganese.
Additionally, raspberries contain antioxidants and anti-inflammatory properties that help protect against diabetes, cancer, and cardiovascular and neurodegenerative diseases. These amazing little red berries really are a super food!
What To Make With Raspberries?
These popular berries certainly are delicious in all kinds of recipes such as scones, bread, mousse, cakes, and drinks, as well as in homemade Shake-and-Go Raspberry Vinaigrette. Not to mention Raspberry Streusel Muffins, of course!
For the Love of Muffins!
Through the years I’ve found several reasons why I love to make muffins. Here are just a few:
- Muffins are easy to make.
- Most muffins freeze well and can be thawed as needed.
- Muffins make great finger food, which is especially important for small children and the elderly.
- You can make muffins in various sizes such as jumbo, regular size, and mini size.
- Muffins are super versatile, meaning some muffins can be used as a dessert.
- You can enjoy muffins at breakfast, lunch, or dinner. A tasty muffin also makes an especially good mid-afternoon snack.
- Extra ingredients can easily be added, such as ground or whole flax, seeds such as chia and sunflower, chopped nuts, etc…
- Muffins make a delightful homemade gift. Simply place a few in a bakery box, add a cute label, and deliver them to someone special.

How to Make Raspberry Streusel Muffins
Raspberry Streusel Muffins are a wonderful treat and pair well with nearly any meal. They are also extremely easy to make gluten-free.
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1 egg
- 1/2 cup sour cream
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour (GF Option: use a gluten-free flour blend + 2 teaspoons xanthan gum unless flour already contains it)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup fresh raspberries
- STREUSEL:
- 1/4 cup all-purpose flour (GF Option: use a gluten-free flour blend + 2 teaspoons xanthan gum unless flour already contains it)
- 1/4 cup quick-cooking oats (GF Option: use a certified gluten-free brand of oats)
- 3 Tablespoons sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 3 Tablespoons cold butter
Instructions
- Preheat oven to 400 degrees F.
- Cream butter, and sugar until light and fluffy; beat in egg, sour cream, milk, and vanilla.
- In a separate mixing bowl combine flour, baking powder, baking soda, cinnamon, and salt. Stir dry ingredients into wet ingredients, just until batter is moistened. Gently fold in raspberries.
- Fill greased muffin cups 2/3 full.
- Combine flour, oats, sugar, cinnamon, and salt. Cut in the butter until crumbly. Sprinkle streusel mixture over muffins.
- Bake for 18-22 minutes or until toothpick inserted into the center comes out clean. Cool for 10 minutes then remove muffins from pan; place muffins on wire rack to cool.
- Store muffins in an air-tight container.
Notes
These muffins freeze well for up to two weeks.
