This Easy Strawberry Pie (Gluten-Free Option) is a family favorite dessert. It’s a recipe we make several times every spring when strawberries are ripe. Don’t you just want to grab a fork and dig in?
First, combine sugar, water, and cornstarch in a medium-size saucepan. Cook over medium-high heat until the mixture boils and thickens.
Next, remove the saucepan from the heat and add strawberry gelatin.
Stir until the gelatin is dissolved and well blended.
Allow the mixture to cool to room temperature. In the meantime, wash, stem, and slice 2 cups of fresh strawberries. Gently fold the strawberries into the cooled strawberry gelatin mixture and pour it into a prebaked 9-inch pie crust. Refrigerate for at least 1 hour.
Before serving top with whipped topping or whipped heavy cream.

Ingredients
- 1 cup sugar
- 1 cup water
- 3 tablespoons cornstarch
- 3 tablespoons strawberry gelatin (GF Option: use a gluten-free brand)
- 2 cups fresh strawberries
- 1 (9-inch) deep-dish pie crust, baked (GF Option: use a gluten-free pie crust)
- 8-ounces whipped topping (GF Option: use 4-ounces heavy cream; whipped)
Instructions
Combine sugar, water, cornstarch; cook over medium-high heat until mixture boils and thickens. Remove from heat and add gelatin; stir until completely combined. Cool to room temperature.
Add 1 pint sliced strawberries to mixture; stir until strawberries are evenly coated. Pour strawberry mixture into prebaked pie crust.
Chill pie for at least 1 hour before serving. Garnish with whipped topping. Serve. Refrigerate leftovers.
