Chicken Pot Pie Casserole Ingredients
The vegetables listed are all optional/suggestions. Use your favorite vegetables or whatever is in season/you already have on hand. Each time I make this it is a little bit different because I am always adding different veggies.
I’m going to tell you a little secret… I never measure my seasonings or garlic. Honestly, measure with your heart. These measurements are just rough suggestions/estimations.
- 4-6 chicken breasts depending on the size, fresh or frozen
- 4 cloves minced garlic
- 1 tablespoon chicken bullion, make sure it is gluten-free if needed
- 2 teaspoons of thyme
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons paprika
- salt and pepper
Vegetable suggestions:
- Green beans
- corn
- peas
- onion
- bell pepper
- mushrooms
- asparagus
- carrots
- zucchini
Other suggestions
- Serve with wild rice and/or cheddar biscuits
Chicken Pot Pie Directions
- Add the chicken and all the seasonings to your crockpot. Time will vary depending on your crockpot, the size of the chicken and if it is fresh or frozen. It could take anywhere from 2-4 hours on low or 4-6 hours on high.
- When the chicken is almost done, about 30-45 minutes before, add any vegetables that you want to the crockpot.
- Once the chicken has reached an internal temperature of 165 °F, remove it from the crockpot and shred it or cube it. Add the chicken back to the crockpot and stir to combine.
- Serve with wild rice and/or cheddar biscuits.
