I have made countless pies using this pie crust. However, if you are not on a gluten-free diet, feel free to use regular flour instead of gluten-free flour. This pie crust is amazing either way.

This easy gluten-free pie crust is actually the same recipe we use for Mini Pecan Pies and Mini Pumpkin Pies, however, you can use it for a 9-inch pie as well.
One recipe makes one deep-dish pie, two 9-inch pies, or 24 mini pies.
Ingredients:
- 8 Tbs butter, softened
- 1 cup gluten-free flour
- 1 tsp xantham gum (omit if your flour blend already includes it)
- 3 oz cream cheese, softened
Directions:
- Combine all the ingredients and mix until dough forms
- Spread evenly in a 9-inch pie plate or 24 mini muffin tins.
- Bake at 375 degrees F for 25-30 minutes if you are making a 9-inch pie shell. If you are making mini pies bake for 20-25 minutes.
Years ago my grandmother shared this pie crust recipe with me. Since then, I have slightly modified the recipe to include a gluten-free version.
