Most days I drink a smoothie for either breakfast or a snack. The other day I was a little bored with my regular chocolate, peanut butter, banana smoothie and wanted to change things up. Experimenting with what I had on hand, this Healthy Chocolate Mint Smoothie was born! After taking one sip, I immediately thought this tasted like an Andes Mint!
I always have mint in my fridge for this recipe and this recipe.
The other night we had chicken for supper. I cut mine up and used it to top a salad. However, my kids ate their chicken with straight ranch… and nothing else. After supper, I was feeling a little mom’s guilt over them not eating any vegetables. That’s when I pulled my blender out and asked, “Who wants a CHOCOLATE MINT smoothie for dessert!?!?” Of course, if you say dessert no little kid is going to turn it down. They fell right into my sneaky trap.
It’s been a hobby of mine to see how much spinach I can sneak into my family’s diet. This Healthy Chocolate Mint Smoothie is another sneaky success! And all of my kids got a serving of vegetables!
Being naturally green, this chocolate mint smoothie is perfect for St. Patrick’s day!
Ingredients
- 8 ounces coconut water
- 5 ice cubes
- 1-2 scoops of chocolate protein powder
- 1/4 cup fresh spinach leaves
- 6-8 mint leaves (more or less depending on size and preference)
Instructions
- Add ingredients to the blender in the order listed above.
- Blend until smooth.
