This cheesy chicken and broccoli pasta is perfect for nights when you just want to eat macaroni and cheese for dinner, but you know you really should eat protein and vegetables too. This is a kid-friendly meal that the whole family will love.

This is also a no-bake meal that is perfect for hot summer days when you don’t want to turn on your oven.
Ingredients
- 12 ounces pasta noodles* (elbows, shells, or rotini)
- 2-3 chicken breasts, cubed
- 1–2 tablespoons cooking oil (I recommend avocado oil)
- Paprika
- Italian Seasoning
- Garlic Powder
- Onion Powder
- 1 head of broccoli (a bag of frozen broccoli also works)
- 1/2 cup milk
- 1/2 lb Velveeta original cheese
- 1 tablespoon chicken bouillon**
- salt and pepper to taste
- Optional: shredded cheddar cheese
Directions
- Cook noodles according to package directions
- While the noodles cook, generously season the chicken with paprika, Italian seasoning, garlic, and onion powder. In a large skillet over medium heat, heat the oil and add the chicken, occasionally stirring until the chicken is fully cooked to 165°F.
- Cook the broccoli. If using frozen broccoli, microwave according to package directions. If using fresh broccoli, chop it into bite-size pieces and add to boiling water, until just fork-tender.
- Add the cooked broccoli to the skillet with the chicken. Cover with a lid. If needed, add more oil. Cook the broccoli and chicken together for about two minutes. Remove from heat.
- Add the milk, Velveeta (cut into cubes), and chicken bouillon in a small saucepan. Place over low heat and continually stir with a sauce whisk until the cheese sauce is completely melted and smooth. Add more milk if it seems too thick. Add salt and pepper. Remove from heat.
- To the large skillet that has the chicken and broccoli, add the drained, cooked noodles and the cheese sauce. Stir to combine.
- Top with shredded cheddar cheese if you’re feeling fancy. Enjoy!
