An Ice Cream Pie was one of the most requested desserts when my children were growing up. That’s probably because they are fun to make, fun to eat and there are infinite flavor combinations. It’s funny how each pie ends up being a work of art and they are so pretty your family will think you bought them at a store.
There certainly are infinite flavor combinations and each pie ends up being a work of art. You can even make them dairy-free and/or gluten-free!

If you have never made an ice cream pie before you are certainly in for a treat! Because an Ice Cream Pie is so easy to make, even kids can get in on the fun! On a hot summer day, delicious frozen treats certainly are refreshing. But don’t stop there! Ice cream pies are also perfect for parties and other celebrations.
Assembly!
First of all, allow your favorite ice cream or frozen yogurt to soften just a little, then spoon it into a graham cracker pie crust (making a dome shape). Don’t worry about how pretty it is at this stage because, in the end, the pie will be completely covered with whipped topping.
NOTE: Be sure to use all gluten-free ingredients, including gluten-free graham cracker pie crust when making gluten-free ice cream pies!!!
Toppings!
Next, top the frozen ice cream or yogurt with a small tub of whipped topping and garnish with candy sprinkles, chocolate curls, chopped nuts, etc…
Into the Freezer!
Next, the pie goes into the freezer until it’s time to serve it.
Cut & Serve!
When you are ready to serve the pie simply take it out of the freezer and cut into individual servings. (NOTE: To make it easier to cut, place a knife under hot water for a minute or two then cut the pie into segments. Repeat the process if needed.)
Variety!
It really doesn’t matter what flavor or type of ice cream or frozen yogurt you use. These pies are really fun to make and people will think that you spent a lot of time on them. (Actually, they only take a few minutes to create.) Don’t be surprised if everyone thinks that you bought them because they really do look fancy!
An Ice Cream Pie can also be made specifically for a particular holiday such as Valentine’s Day or Christmas.
