A little bit ago, we bought lemons, and when I saw them sitting on the counter, I knew lemon poppy seed muffins were what I should bake with them. If you have some lemons, these are perfect for you to make too! You can totally make lemon poppy seed bread by using a bread pan instead of muffin tins and baking it for longer than the suggested 20-25 minutes.
Recipe Ingredients
- 1 cup milk
- 2 eggs
- 1/2 cup melted butter
- juice from 2 lemons
- 2 tbs lemon zest
- 3/4 cup sugar
- 1 1/2 cup flour, use gluten-free if needed
- 1/2 cup almond flour
- 2 tsp xantham gum if you are using gluten-free flour (omit if your flour already includes it)
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbs poppy seeds
Directions
- Preheat oven to 350. Line muffin tin with liners. Set aside
- In a medium bowl mix together all your dry ingredients- flour, almond flour, xantham gum, baking soda, baking powder, poppy seeds
- In a different bowl, mix all the wet ingredients- milk, eggs, butter, lemon juice, sugar, lemon zest
- Slowly mix the dry ingredients into the wet ingredients
- Pour the batter into the muffin tins. Bake for 20-25 minutes. Or until toothpick comes out clean

- 2 tbs lemon zest
- 3/4 cup sugar
- 1 1/2 cup gluten-free flour
- 1/2 cup almond flour
- 2 tsp xantham gum (omit if your flour already includes it)
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbs poppy seeds
Instructions
