Cowboy Caviar is healthy, addicting, easy to make, and by far my favorite appetizer. As usual, this recipe is gluten-free.

A fun part of appetizers is the dishes you use to serve them.
Cowboy Caviar Ingredients
- 2 medium-large tomatoes, diced
- 1 Bell pepper, diced
- Small onion, diced
- 1 can of black beans, rinsed and drained
- 1 can corn, drained
- 2 Tablespoons lime juice
- garlic, measure with your heart
- onion powder
- garlic powder
- cilantro, I add a ton
- Salt and pepper
- 1/4 cup creamy Italian Dressing (such as the Olive Garden brand, or the Aldi version)
Directions
- Finely chop all the vegetables and cilantro.
- Combine all the ingredients into a large bowl or large Tupperware container. Stir to combine.
- Place in an airtight container and refrigerate for a minimum of 2 hours.
- Give it another stir before serving. Serve with your favorite tortilla or corn chip. Eat within 2 days.

Gluten-Free
While you certainly don’t need an excuse to make cowboy caviar (I make it all the time just because I crave it) this would be an excellent appetizer for the 4th of July, Super Bowl, or New Year’s Eve.
