A slice of warm coffee cake alongside a cup of hot coffee or tea seems like pure comfort food to me. Not only is it a great way to start your day, but it’s also a great way to end it.

This Medjool Date Coffee Cake begins with a simple batter that comes together quickly and easily. When the cake batter is ready simply spoon it into a 9×13 baking pan.
The topping consists of a mixture of chopped dates, chopped walnuts, and flaked coconut. Sprinkle the topping evenly over the the batter.
Next, bake the Medjool Date Coffee Cake at 350 degrees F. for 20 to 25 minutes or until a cake tester comes out clean. Cool on a wire rack.
Cut, serve, and enjoy!
You can also serve Medjool Date Coffee Cake with a scoop of vanilla ice cream or a dollop of whipped topping.
Old Fashioned and Easy Medjool Date Coffee Cake
A delicious coffee cake filled with chopped dates and other tasty ingredients.
Ingredients
- CAKE:
- 1/3 cup mashed banana (mash ripe banana with a fork)
- 1/2 cup butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1-1/4 cups water
- 3 cups flour (unbleached white flour works best)
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1-1/2 cups chopped Medjool dates
- TOPPING:
- 1/2 cup chopped Medjool dates
- 1/2 cup chopped walnuts (or pecans)
- 1/2 cup flaked coconut
- OPTIONAL:
- Vanilla ice cream or whipped topping
Instructions
- Beat together mashed banana and butter until creamy. Add eggs, vanilla, and water; beat until well combined.
- Add flour, baking soda, and baking powder; beat well. Stir in 1-1/2 cups chopped dates.
- Spoon batter into an well greased and floured 9 x 13-inch baking pan. Spread batter evenly in pan.
- Combine topping ingredients and sprinkle over batter.
- Bake at 350 degrees F. for 20 to 25 minutes or until a cake tester comes out clean. Cool on wire rack.
- Serve with vanilla ice cream or whipped topping.
