Cajun shrimp and grits are easy to make and ready in under half an hour. This recipe is naturally gluten-free and makes 6-8 servings. You could easily half this recipe if you only want to make this for one or two people.
Cajun Shrimp and Grits Ingredients
- 2 tablespoon butter, divided
- 2 cloves of garlic, minced
- 1/2 of a white onion, diced
- 1 tablespoon Cajun seasoning
- 4 cups of chicken or vegetable broth
- 1 teaspoon each of garlic powder, onion powder, and paprika
- 1 cup quick-cooking grits
- 5 slices of bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 pound of jumbo raw shrimp, peeled and tails removed

- salt and pepper to taste
Directions
- To a medium or large sauce pan, add 1 tablespoon of butter, garlic, and diced onion. On medium heat, sauté the onion and garlic until the onion is cooked.
- Add the chicken or vegetable broth, Cajun seasoning, onion and garlic powder, and paprika. Bring to a boil.
- Slowly add the quick grits to the boiling broth, constantly and slowly stirring. Reduce heat to low. Grits should be thick and fully cooked in about five minutes.
- Stir in the cheddar cheese until completely melted.
- In a skillet, cook 5 pieces of bacon. Remove the cooked bacon from the skillet, crumble and add to the grits. Leave the bacon grease in the skillet.
- In the same skillet that you cooked the bacon, add 1 tablespoon of butter and 1 pound of peeled shrimp, with tail removed. Sprinkle with more Cajun seasoning. Sauté until the shrimp are fully cooked.
- Add grits to a bowl, top with shrimp, parsley, and 1 spoonful of the butter/bacon grease from the skillet. Add more cheese on top if desired.
