A few weeks ago, I posted this chicken pot pie casserole recipe, and in the pictures are these savory gluten-free cheddar biscuits. Those two recipes are such a perfect match! However, these biscuits would be a great side for any number of meals.

- 1 1/2 teaspoons xantham gum (omit if you use a four blend that already includes this)
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1/2 cup shortening (or cold butter, cubed)
- 1 cup whole milk
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 tablespoon Italian Seasoning
- 2 teaspoons Rosemary
- 1 garlic clove, minced
- 1 cup freshly shredded cheddar cheese
Directions
- Combine the flour, xantham gum, baking powder, and salt. Use a fork to add the shortening (or butter) and work it into the flour mixture until it is crumbly.
- Add the milk and stir to combine.
- Add all the seasonings, then add the cheese and fold to combine.
- Using a large spoon drop dough onto a cookie sheet lined with a silicone baking mat. Use your fingers to gently shape and smooth the top of the biscuits. You can make them any size you want as long as they are all approximately the same size. I make 10-12 biscuits with this dough.
- Bake at 400 °F for 18-20 minutes until golden brown on top, you might need to cook them longer or shorter depending on the size of your biscuits.
- Optional brush the tops with butter.
