My family looks forward to eating tomato cucumber and feta salad every summer. Even my people who don’t like salad will devour this. It is especially delicious if the timing works out where I can use garden tomatoes and cucumbers, but obviously store-bought works as well.

Tomato Cucumber and Feta Ingredients
- 3 large tomatoes chopped into bite-size pieces (or 1 cup cherry tomatoes cut in half)
- 1 medium-sized cucumbers
- 1/2 red onion, diced
- 4 ounces crumbled feta cheese
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- salt and pepper to taste
Directions
- Add everything to a salad bowl and stir to combine.
- Serve chilled. Eat within one day.
Notes
The salt causes the vegetables to lose their water, if you want to make this in advance, then wait to add the salt until right before serving.
It is not necessary, but you could use a mandolin slicer to get all your vegetables to be equal in size.
