Most days I drink a smoothie for either breakfast or a snack. The other day I was a little bored with my regular chocolate, peanut butter, banana smoothie and wanted to change things up. Experimenting with what I had on hand, this Chocolate Mint Smoothie was born! After taking one sip, I immediately thought this tasted like an Andes Mint!
The other night we had chicken for supper. I cut mine up and used it to top a salad. However, my kids ate their chicken with straight ranch… and nothing else. After supper, I was feeling a little mom guilt over them not eating any vegetables. That’s when I pulled my blender out and asked, “Who wants a CHOCOLATE MINT smoothie for dessert!?!?” Of course, if you say dessert no little kid is going to turn it down. They fell right into my sneaky trap.
It’s been a hobby of mine to see how much spinach I can sneak into my family’s diet. This smoothie is another sneaky success! And all of my kids got a serving of vegetables!
Being naturally green, this chocolate mint smoothie is perfect for St. Patrick’s day!
